    Instructions

    1. Add milk through yeast to the bread machine. Run on dough cycle.
    2. Divide dough into 12 pieces. Flatten into rounds.
    3. Divide anko into 12 pieces and form into balls.
    4. Place a ball of anko in the center of each piece of dough and wrap.
    5. Steam or bake at 400 degrees for 15 minutes.

    Notes

    Use a mix of bread flour and all-purpose flour. Use more bread flour if baking to get more rise, and more all-purpose flour if steaming. If steaming, make the dough on the dry side. If baking, make the dough on the wet side for a softer bun. If baking, brush rolls with egg for a shiny finish. Try a chocolate peanut butter filling: 1/4 cup peanut butter, 2 Tbsp. powdered sugar, 1 Tbsp. cocoa powder
