    Instructions

    1. For sponge: Proof 1 1/2 tsp. yeast in water 5 minutes. Mix in whole wheat and 1 cup bread flour. Cover bowl with plastic wrap and leave at room temperature for 2 hours, until the sponge has doubled in size.
    2. For dough: Add the rest of the yeast, honey, and salt. Work in bread flour until a stiff dough forms. Knead 10 minutes.
    3. Divide dough into 12 balls. Let balls rest 5-20 minutes.
    4. Form bagels by punching holes through the dough. Cover with plastic wrap and refrigerate over night.
    5. Boil bagels for a minute on each side. Bake at 500 degrees for 5 minutes, then rotate the pans and lower heat to 450 for another 5.
