Ingredients

    Instructions

    1. For the base cookie layer, melt 1/2 c. of the butter and beat with granulated sugar, cocoa powder and egg. Stir in cracker crumbs, nuts, and coconut. Press into an 8x8 square pan and bake at 350 for 20 minutes. Let cool.
    2. For the filling, beat 6 Tbsp. of the remaining softened butter with powdered sugar, cornstarch, and vanilla. Add milk as needed to reach the consistency of buttercream. Spread over cookie layer. Chill in the freezer while preparing the final layer.
    3. Melt the remaining 2 Tbsp. of butter with the chocolate. Spread on top of the buttercream layer.
    4. Chill until chocolate has set. Cut into squares. Store in an airtight container in the refrigerator.

    Notes

1 3/4. graham cracker crumbs is about one sleeve, crushed. Original recipe is no-bake; changed for salmonella safety. Also halved the powdered sugar in the middle layer and substituted cornstarch for custard powder. For clean squares, score the chocolate layer while still soft.
