    Instructions

    1. Add carrots and onion to Vitamix and pulse until roughly chopped.
    2. Saute vegetables in olive oil until tender, about 10 minutes.
    3. Place all other ingredients in Vitamix, add sauteed vegetables and blend on high until smooth.
