Tapioca Pearls (Boba)

- In a small saucepan, mix water, brown sugar, and one tablespoon of tapioca starch.
- Stir over low heat until the mixture starts to thicken.
- Remove from heat and stir in the remaining tapioca starch. Knead until it forms a smooth dough.
- Segment dough into ropes and cut into boba-sized pieces. Roll into balls and coat in tapioca starch. Dry.
- To cook, simmer in 10x the volume of water for 20 minutes, then rest 20 minutes. Rinse and serve.
