Tapioca Pearls (Boba)

    1. In a small saucepan, mix water, brown sugar, and one tablespoon of tapioca starch.
    2. Stir over low heat until the mixture starts to thicken.
    3. Remove from heat and stir in the remaining tapioca starch. Knead until it forms a smooth dough.
    4. Segment dough into ropes and cut into boba-sized pieces. Roll into balls and coat in tapioca starch. Dry.
    5. To cook, simmer in 10x the volume of water for 20 minutes, then rest 20 minutes. Rinse and serve.
