Pan-Fried Dumplings

    Instructions

    1. Mix flour and water. Mix until a shaggy dough forms.
    2. Knead the dough, adding more water 1 Tbsp. at a time until dough forms a smooth ball.
    3. Working in batches, roll a rope and pull off sections of dough about 10-12 g or about 1/2 oz. each. Roll into balls.
    4. Roll out each ball into a circle about the size of your palm.
    5. Wet the edge of a circle and place about 1 tsp. of filling inside. Seal and crimp.
    6. Heat 2 Tbsp. of oil in a skillet on med-high heat. Place the dumplings in a circle and lightly brown.
    7. Pour 1/2 c. of water over the dumplings and cover. Cook over med-low heat until the water evaporates.
    8. Uncover and raise the heat. Cook 1-2 more minutes until the bottoms are browned.
