Carrot Loaf Cake

    Instructions

    1. Mix carrots, oil, applesauce, sugar, eggs, and spices.
    2. Mix flour and leavenings. Fold into wet ingredients.
    3. Pour into prepared 9x5 loaf pan and bake 350 degrees for 50 to 60 minutes, until tester inserted in the center comes out clean.
    4. Cool in pan for 10 minutes. Turn out onto cooling rack and cool completely.
