    1. Line loaf pan(s) with parchment paper.
    2. Whisk the honey and warm water for the cake.
    3. Whisk eggs with a standing mixer until combined. Add the sugar. Beat on high speed for 5 minutes, until the volume increases about 4 times and the mixture is pale yellow.
    4. Add the honey imxture and whisk on low speed until combined, about 30 seconds.
    5. Add the bread flour by thirds. Whisk until just combined, for about 1 minute. Do not overmix.
    6. Pour the batter into the pan(s). Zigzag a toothpick through the batter to remove air bubbles, and level by dropping on the counter several times.
    7. Bake at 320 degrees in the middle rack for 35 to 40 minutes, until golden brown and a skewer inserted in the middle comes out clean. When done, cake sides will pull away from the sides slightly, the top will be flat and will feel spongy when pressed.
    8. Mix the honey and warm water for brushing. Brush the top of the cake with a pastry brush.
    9. Remove the cake from the pan and immediately wrap in plastic. Store in the refrigerator overnight, top side facing down.
    10. Slice off the sides of the cake with a sharp bread knife and cut into 1-inch thick slices to serve.
