    Instructions

    1. Beat oil, eggs, and vanilla. Stir in cider.
    2. Combine flour, leavenings, sugars, and spices.
    3. Gently fold wet ingredients into dry.
    4. Divide batter into prepared muffin cups.
    5. Bake at 375 degrees for 15 to17 minutes.

    Notes

    Crumb topping: 1/2 c. oats, 1/4 c. flour, 2 Tbsp. brown sugar, 1 Tbsp. butter
