Spiced Peach Muffins

Instructions
- Combine flour, baking powder, brown sugar, and spices.
- Whisk together eggs, oil, applesauce, milk, lemon juice, and vanilla. Stir into dry ingredients.
- Gently fold in fruit.
- Heap batter into lined & greased muffin tins (cups will be very full). Sprinkle with granulated sugar.
- Bake at 400 degrees for 20 to 25 minutes, or until they're golden and spring back when touched in the center.
- Cool muffins on a rack. Store, well-wrapped, for 3 days, or freeze for up to 3 months.
