    Instructions

    1. Combine flour, baking powder, brown sugar, and spices.
    2. Whisk together eggs, oil, applesauce, milk, lemon juice, and vanilla. Stir into dry ingredients.
    3. Gently fold in fruit.
    4. Heap batter into lined & greased muffin tins (cups will be very full). Sprinkle with granulated sugar.
    5. Bake at 400 degrees for 20 to 25 minutes, or until they're golden and spring back when touched in the center.
    6. Cool muffins on a rack. Store, well-wrapped, for 3 days, or freeze for up to 3 months.
