Udon Noodles

    Instructions

    1. Add salt through tapioca starch to bread machine.
    2. Run the bread machine on the dough cycle, adding water or flour as needed in the first ten minutes until a dry dough forms.
    3. Remove finished dough from machine and seal in a plastic bag. Rest for two more hours.
    4. Divide dough in half. Roll one half into a rectangle 1/8 inch thick.
    5. Fold rectangle lengthwise into thirds. Cut noodles. Cover with potato starch to prevent sticking. Repeat with other half of dough.
    6. To cook: Bring water to a rapid boil. Cook noodles until they float. Drain and rinse. Use in recipe of choice.
    7. To freeze: Divide noodles into single servings and freeze in sandwich bags. Cook from frozen, without thawing.
