Udon Noodles

Instructions
- Add salt through tapioca starch to bread machine.
- Run the bread machine on the dough cycle, adding water or flour as needed in the first ten minutes until a dry dough forms.
- Remove finished dough from machine and seal in a plastic bag. Rest for two more hours.
- Divide dough in half. Roll one half into a rectangle 1/8 inch thick.
- Fold rectangle lengthwise into thirds. Cut noodles. Cover with potato starch to prevent sticking. Repeat with other half of dough.
- To cook: Bring water to a rapid boil. Cook noodles until they float. Drain and rinse. Use in recipe of choice.
- To freeze: Divide noodles into single servings and freeze in sandwich bags. Cook from frozen, without thawing.
