Banana Bread

Instructions
- Cream butter and sugar. Add eggs and beat well. Add banana, yogurt, and vanilla and beat until blended.
- Combine flour and leavenings. Stir into wet ingredients until just combined.
- Spoon batter into a loaf pan coated with cooking spray.
- Bake at 350 degrees for one hour, or until a tester comes out clean.
- Cool 10 minutes. Remove loaf from pan. Cool completely on wire rack.
Notes
For muffins, spoon into 12 paper-lined muffin cups and bake at 375 degrees for 15-20 minutes. If no yogurt, add a splash of milk to the bananas (see http://www.foodnetwork.com/recipes/banana-bread-recipe.html).
