    Instructions

    1. Cream butter and sugar. Add eggs and beat well. Add banana, yogurt, and vanilla and beat until blended.
    2. Combine flour and leavenings. Stir into wet ingredients until just combined.
    3. Spoon batter into a loaf pan coated with cooking spray.
    4. Bake at 350 degrees for one hour, or until a tester comes out clean.
    5. Cool 10 minutes. Remove loaf from pan. Cool completely on wire rack.

    Notes

    For muffins, spoon into 12 paper-lined muffin cups and bake at 375 degrees for 15-20 minutes. If no yogurt, add a splash of milk to the bananas (see http://www.foodnetwork.com/recipes/banana-bread-recipe.html).
