    Instructions

    1. Crush graham crackers into fine crumbs. Combine with brown sugar and butter. If too dry, add cold water by tablespoonfuls until mixture sticks together. Press crust into pie pan.
    2. Beat cheese until smooth. Add eggs, one at a time. Gradually add granulated sugar and beat until creamy. Mix in sour cream and vanilla.
    3. Pour filling into crust.
    4. Bake at 325 degrees for 1 hour.
    5. Crack open the oven door and cool slowly for 30 minutes. Remove from oven and cool completely.
    6. Cover with plastic wrap and chill in the refrigerator for at least 4 hours.

    Notes

    Begin checking for doneness at 45 minutes. Cheesecake will be done baking when the center jiggles like set Jello (not liquid).
