Cheesecake

Instructions
- Crush graham crackers into fine crumbs. Combine with brown sugar and butter. If too dry, add cold water by tablespoonfuls until mixture sticks together. Press crust into pie pan.
- Beat cheese until smooth. Add eggs, one at a time. Gradually add granulated sugar and beat until creamy. Mix in sour cream and vanilla.
- Pour filling into crust.
- Bake at 325 degrees for 1 hour.
- Crack open the oven door and cool slowly for 30 minutes. Remove from oven and cool completely.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours.
Notes
Begin checking for doneness at 45 minutes. Cheesecake will be done baking when the center jiggles like set Jello (not liquid).
