Blueberry Muffins

    Instructions

    1. Cream butter and sugar. Mix in egg and vanilla.
    2. Combine flour through cinnamon. Mix into butter mixture alternately with buttermilk.
    3. Fold in blueberries
    4. Spoon into 12 muffin cups coated with spray. (Cups will be very full.)
    5. Bake at 350 degrees for 15-20 minutes. Cool in pans 5 minutes. Transfer to wire rack to cool completely.

    Notes

    Make buttermilk by combining the milk with 1 Tbsp. lemon juice.
